Make grilled pork the center of your summer menu

submitted by Lauren Panoff, RD, ShopRite Yardley

Summer is here, and for many households, this means it’s time to fire up the grill and create meals that are full of healthy proteins and delicious, locally grown fruits and vegetables. This week we’ve got a terrific new recipe for you to try: Grilled Blackened Pork Chops with Peach-Mango Salsa. Visit our YouTube page for this recipe and more!

Pork chops are lean, cost-effective, easy to prepare, and can take on a number of flavors. You could even try a grilled kebab recipe, with chunks of pork or plant protein on a skewer.

Serve grilled recipes with a side of greens or a grain salad, raw veggies with dip, or fresh berries.

Don’t have an outdoor grill? No problem.

Pork chops or tofu can be seasoned, marinated, and either seared in a pan and transferred to a hot oven, prepared in an electric smoker, or grilled using a cast iron griddle prior to adding salsa. To save time, prep salsas, dressings, or marinades in advance. Store these in the refrigerator until you’re ready to use them.

Make your grill recipes even more sustainable by including locally grown or seasonal summer produce from farmers markets or community supported agriculture farms.

ShopRite dietitians have suggested this Grilled Blackened Pork Chops with Peach-Mango Salsa recipe. It uses healthy ingredients like a fresh fruit and veggie salsa and an avocado oil marinade, and can be adapted to meet your own preferences.
