Experience the classic Roman dish, cacio e pepe, prepared tableside!
Gusto Ristorante Italiano BYOB opened in September of 2022 with the mission of bringing true, authentic Italian cuisine to the area.
One of the most popular dishes is their cacio e pepe. This special dish is prepared tableside and is available to diners on Sundays, Tuesdays and Wednesdays.
If you are unfamiliar with this classic Roman dish, it translates to “cheese and pepper” and is made from just three key ingredients – pasta, pecorino romano cheese and cracked black pepper.
At Gusto, the preparation is tableside with a large wheel of Pecorino Romano. The wheel is hollowed out to create a bowl-like shape. As the pasta cooks, the wheel is gently warmed, allowing the cheese to soften and melt. Once the pasta is al dente, it is transferred directly into the cheese wheel. The heat of the pasta helps to create a creamy sauce which is mixed with freshly cracked black pepper.
The process involves tossing the pasta vigorously, ensuring it is evenly coated in the melted cheese, resulting in a rich, velvety texture.
This method not only elevates the dining experience but also intensifies the cheese flavor, as the pasta absorbs the essence of the Pecorino wheel.
Gusto offers a true Italian culinary experience with menu selections that change frequently to keep things fresh and new for their loyal diners. Meals are served according to the Italian menu structure: Antipasto (appetizer), Primi piatti (first course of pasta) and Secondi piatti (second course of just protein).
